Grilled Chicken
Wing Soup

Smoky chicken wing flavour by the spoonful.

  • Cook Time: 15 min grilling + 1 hour simmering
  • Serves: 4-6 large bowls

Ingredients

  • 4-5

    Carrots
  • 1

    Sweet Onion
  • 4-5

    Fingerling potatoes
  • 1

    Celery Stalk
  • 2-3

    chicken breasts

Broth:

  • 3 cups

    Chicken stock
  • 1/4 cup

    hot sauce
  • 1 cup

    half and half cream
  • 1 cup

    Rickard's Red

    Topping:

    • Crumbled blue cheese
    • Salt
    • Pepper

Directions

  1. Heat your grill and coat lightly with olive oil.

  2. Grill carrots, sweet onion, fingerling potatoes and chicken breasts until 3/4 done.

  3. When cool, chop carrots, sweet onion, potatoes and chicken into hearty-sized cubes.

  4. In a large pot combine chicken stock, hot sauce, cream and Rickard’s Red over medium heat for 5 minutes, stirring continuously.

  5. Add chopped ingredients to soup and simmer on low heat for 1 hour.

  6. To thicken, stir in flour a small amount at a time until desired consistency is reached.

  7. Serve hot in large bowls topped with crumbled blue cheese.
