Pork Chops
with Apple Chutney

Ingredients

Pork Chop Brine:

  • 6 bone-in

    Thick cut
    pork chops
  • 2 cups

    Water
  • 2 cups

    Rickard's
    Dark or Red
  • ⅓ cup

    Salt
  • ⅓ cup

    Brown Sugar
  • 3 tbsp

    Pepper
  • 1

    Bay Leaf

Apple Chutney:

  • 2

    Gala Apples
  • 1 sliced

    Sweet Onion
  • 1 cup

    Rickard's White
  • 2 tbsp

    Maple Syrup
  • ¼ tsp

    Salt
  • ¼ tsp

    Ground Pepper
  • ½ tsp

    Cinnamon

Directions

  1. Place pork chops in a reusable container, add brine mixture and refrigerate 4-5 hours.

  2. Julienne apples and slice onions into half-rings.

  3. On side burner, combine apple chutney ingredients in a saucepan. Simmer 10-15 minutes until Rickard’s White reduces and apples and onions are soft and golden.

  4. Preheat grill to 205ºC/400ºF.

  5. Grill pork chops 3 minutes per side, flipping twice (12 minutes total) to internal temperature of 70ºC/160ºF.

  6. Plate grilled pork chops and top with apple chutney
