Thirsty Tacos

Fresh, light and perfect for a summertime fiesta.

Ingredients

  • 1 bottle

    Rickard's® White
  • 1 pack

    RICKARD’S CITRUS PEPPER BBQ MARINADE*
  • ¼ cup

    chopped fresh cilantro
  • ¼ cup

    lime juice
  • 2 tbsp

    Olive Oil
  • 2 tbsp

    Honey
  • 1 ½ lb

    Large Shrimp, Peeled, Deveined, Tails removed
  • 6

    large bamboo skewers, soaked
  • 12

    corn tortillas
  • 1 cup

    guacamole
  • 6

    thinly sliced radishes
  • 2

    thinly sliced green onions
  • ⅓ cup

    crumbled feta cheese
  • 12

    lime wedges

Directions

  1. Stir together Rickard’s® White Beer, Rickard’s Citrus Pepper BBQ Marinade*, 2 tbsp (30 mL) cilantro, lime juice, oil and honey. Add shrimp; toss well. Transfer to resealable plastic bag; refrigerate for 30 to 60 minutes. Thread onto skewers.

  2. Preheat grill to medium-high; grease grate well. Grill shrimp for 2 to 3 minutes per side or until shrimp start to curl, turn pink and are cooked through.

  3. Divide shrimp evenly among warm tortillas. Top with guacamole, radishes, green onions, feta and remaining cilantro. Serve with lime wedges.
