ROSEMARY GRILLED
LAMB CHOPS

Simple and delicious, take your time with this summer favourite.

Ingredients

  • 1 bunch

    Rosemary
  • 1 zested

    Lemon
  • 4 cloves

    Garlic
  • 2 racks

    Lamb
  • 1/2 cup

    Olive Oil
  • freshly cracked

    Black pepper
  • a pinch

    Kosher Salt
  • 1 tbsp

    Vegetable Oil

Directions

  1. In a food processor, combine rosemary, lemon zest, garlic and olive oil and blend until it’s a loose paste.

  2. Portion the lamb chops from the rack (slicing in between the bones). Place the lamb chops in a plastic bag and pour the rosemary paste in the bag.

  3. Shake the bag to coat the lamb chops with the marinade and refrigerate overnight.

  4. Preheat BBQ to medium-high heat.

  5. Season lamb chops with salt and pepper and lightly coat with oil. Grill on each side for about 3 minutes for medium rare.

  6. Let lamb rest for 5-10 minutes and serve.
